A little Portal to Peru

A place where, even for a few minutes, you can feel like you’ve stepped into the streets of Peru.

Because at Candela, the open flame isn’t just a cooking method.

It’s the connection and reconnection.

Peruvian Street Food

Rooted in memory. Cooked over fire. Made for the street.

Fire

For years, I had been thinking about how much I missed the feeling of food being cooked over fire on the streets of Peru. You can walk through a plaza or around a neighborhood and find someone grilling over an open flame. The smell of charcoal and Peruvian spices travels through the streets. You know something is cooking before you even see the grill

Candela St. begins with memories.

Every dish on the Candela menu carries a piece of my childhood.

I remember the anticuchos—that irresistible smell of Peruvian seasoning and charcoal filling the neighborhood around seven in the evening.

I remember Tía Rosita’s chicken skewers, served with potatoes roasted over charcoal and her delicious ají made the traditional way in a batán.

I remember the family Pachamanca, when food, fire, earth, and family all came together.

And I remember making causa with my cousins when we were kids, sometimes sneaking some of Tía Rosita’s ají amarillo because we wanted our causa to taste like hers.

These aren’t just recipes.

They’re memories.
